Ingredients:

6 oz Wide Egg Noodles
1 Tbsp extra virgin olive oil
1 small red onion, chopped
Ears corn, removed from cob
1 cup Heirloom cherry tomatoes, halved
8 oz Pulled pork, prepared & heated
1 cup Salsa Verde

Cooking Directions:

1. Cook ½ a bag of Light ‘n Fluffy® Wide Egg Noodles according to package instructions.

2. In a large sauté pan over medium heat, add olive oil. Stir in red onion, fresh corn, cherry tomatoes and pulled pork. Cook 3-4 minutes, or until tender crisp.

3. Stir in the salsa Verde, then cook for an additional 5-10 minutes, or until heated through.

4. Stir in pasta.

5. To serve, garnish with sliced radishes, queso fresco, cilantro, and lime wedges. Drizzle with additional salsa Verde, if desired.
